Crockpot Chicken

Who likes quick and easy? I do!! I do!! Here is a simple recipe for delicious crockpot chicken.
This makes about 5 servings so it can last for a few meals, unless you want to share with your family.

4-5 Boneless Chicken Breasts
1 Packet of Low Sodium Taco Seasoning (see optional recipe below)
1 Packet of Ranch Seasoning (see optional recipe below)
14 oz of Low Sodium Chicken Broth

Combine all ingredients in crockpot and set on low for 5 hours. After 5 hours shred with 2 forks and cook for another 30 minutes.

You can add this in a wrap, on a salad, in a taco. Whatever sounds good to you. I baked 2 corn tortillas in the oven for 10 minutes and made tostadas. I put the chicken on and topped with lettuce, tomato, guacamole and some greek yogurt mixed ahead of time with taco seasoning. Yum Yum!

I wanted to make my seasonings a little healthier than the store bought packet so this is what I did!

Ranch Seasoning Mix
2 tbsp dried parsley
2 tsp dried dill
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1/2 tsp dried chives
pinch of salt

Combine all together

Taco Seasoning Mix
1 tbsp chili powder
1 1/2 tsp cumin
1 1/2 tsp paprika
1 tsp oregano
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper

Combine all together
